Weekly Menu Plan – January 24, 2010

What a change in weather we are having here! The temperature today is in the 50s (no, that is not a typo). It is pouring & we are having wind gusts up to 20 MPH. While I am happy that there is no sub-zero temps right now, I am a little bummed that today’s weather has me heading to the gym in a few to run 10 miles on the treadmill instead of outside. I think I will be breaking that up into 2 – 5 mile segments or maybe even utilize the indoor track, though 1 mile=12 laps & that makes me a little loopy! LOL!

Cheryl, from Gluten-free Goodness, is hosting this week’s gluten-free menu swap. Cheryl chose “seasonal winter foods” as the theme for the week. The one thing I can think of that is a seasonal winter food that we have in our menu plan is squash. I love squash. I like kabocha, acron, butternutt – you name it. I love this recipe for acorn squash stuffed with rice.

Sunday – Rotisserie Chicken, baked sweet potato, asparagus & salad

Monday-Filet Mignon, baked potato, roasted broccoli & salad

Tuesday – Tacos (with GF Petals), refried beans, corn & salad

Wednesday – French Bread Pizza, steamed green beans & salad

Thursday- Turkey burgers, sweet potato french fries, zucchni & salad

Friday- Chicken Fingers, mashed potatoes, peas & salad

Saturday – Leftovers

Baked Goods

Bread

Zucchini Muffins

Blueberry Muffins
