Happy Easter & a menu plan

Happy Easter! Did you find all of the hidden eggs? Don’t want those hard boiled eggs to go hidden for too long! This post is going to be shorter than my usual menu plan & weekly recap. I still have cleaning & prepping to do for our company that is coming this afternoon! I work best under pressure. I have had a horrible cold for the past week, so I got nothing done other than the runs that I needed to get in for my marathon training and feeding the kids. I am finally feeling better!

The weather here has been glorious! It was 84 here on Friday – unheard of for April! I had a wonderful, outdoor run on Saturday in shorts & a tank top! It was 60 degrees at 7 AM. No arguments here. I am thankful that mother nature is giving us a little break after our long, hard winter. I pray that the rain stops on the east coast, though. Rhode Island has had some severe flooding.

Onto the meals.

Sunday – Ham, rosemary roasted potatoes, steamed carrots & broccoli, salad

Monday -Mahi mahi, baked sweet potatos, zucchini & salad

Tuesday – Grilled Chicken Fettucine Alfredo, broccoli & salad

Wednesday -Breakfast for dinner – eggs, hash browns, bacon & fruit salad

Thursday -Pizza, roasted veggies & salad

Friday -Inside out burgers, parsnip fries & salad

Saturday -leftovers

Baked Goods


Blueberry coconut bars (didn’t get to make them last week)

  • I am so happy that you have had such great weather! We, here in Indiana, have had unusually warm temps too! I love it :) I am new here to your blog and I see that you are the mom of a little guy (and yourself) who has food intolerance? Gluten? I can totally relate to this because I am too the mommy of two and our little boy has food allergies, and food intolerances that cause severe Eczema. We have been to tons of doctors and tried so many creams and meds without much of anything helping. Our prayers were answered though when we began giving him his special probiotic and he cleared right up! We still avoid his serious allergens but we no longer have to worry so much about all the intolerances. We really try to eat mostly whole foods in our family and have really been minimizing our consumption of processed foods. Last month we tried Kamut Khorasan Wheat and we really enjoyed it – great taste and flavor – and I was wondering if this could be an option for you? I read on their website that because it is an ancient grain and so different than today's varieties, that there are gluten intolerant people who can safely eat it! I just wanted to mention this incase you would want to check it out? Anyway – I hope sometime you will join me at my blog where I focus on a fun, green, healthy and allergy free way of life!     Thanks so much for reading my blog!! Yes, my son and I both have Celiac. I also have additional food intolerances to weird stuff like sesame & poppy seeds, onions and some too much soy.

    Kamut Khorasan Wheat is not safe for celiacs. Some people who are not celiac, but have non-celiac gluten sensitivity may be able to tolerate it.
