Phew! The end of a crazy week! I can breathe a little now. While this week is slowing down socially, it will be my craziest running week in my marathon training. This week my mileage will peak at 40 miles, with a 20 mile long run on Saturday. I need to make sure that I am getting plenty of sleep & nutritious food this week.
Sunday – Chicken breast (leftover from the BBQ), millet, roasted veggies & salad
Monday -Bourbon chicken, brown rice, broccoli & salad
Tuesday -Mexican Pizzas, refried beans & salad
Wednesday -Breakfast for dinner
Thursday -Shrimp Scampi, quinoa pasta, green beans & salad
Friday – BBQ pulled pork, mashed potatoes, zucchini & salad
Saturday -Leftovers
