I was pleasantly surprised to see the new Gluten-free Bisquick arrive on my front porch the other day. Live Gluten Freely sent me out the sample to review (I received this item as a complimentary sample). There are many recipes on the box and the Live Gluten Freely/Bisquick website, but I had scones on the brain. Not only did I have scones on the brain, but I had blueberries in my fridge that I needed to use before they went bad. At least my pants weren’t on the ground.
(If you didn’t watch American Idol this year, you have no clue what that meant and I apologize. Now on with our scheduled programming.)

Gluten-free Bisquick is slightly different from “normal” Bisquick. There is a FAQ page to help with any questions or issues you may be having. There is no shortening in the Gluten-Free Bisquick, as there is in the “normal” Bisquick. Heidi, from Adventures of a Gluten-Free Mom, took matters into her own hands and made her own GF Bisquick using the store bought Gluten-Free Bisquick and then adding shortening and storing that way. Now she can use her GF Bisquick mix cup for cup in all of her old favorite recipes. The ingredients for the Gluten-Free Bisquick are:
Rice Flour, Sugar, Leavening (baking soda, sodium aluminum phosphate, monocalcium phosphate), Modified Potato Starch, Salt, Xanthan Gum

Now, the good stuff. Blueberry Scones. I had never had a scone until last fall when I made pumpkin raisin scones and I was quickly addicted. Of course it didn’t hurt that one of my favorite ingredients was one of the star ingredients – pumpkin.
Blueberries are right up there, too, so I was on the hunt for a good recipe. I happened upon this recipe from Stonyfield and modified it to fit my needs.

Gluten-free Blueberry Scones
2 cups of Gluten-Free Bisquick
1 1/4 cups of Greek plain yogurt (I used Yoplait)
1 cup blueberries (recipe recommends frozen, but I used fresh; they get a little squished, but they are still yummy)
Glaze:
3 TBSP butter, melted
2 TBSP Sugar in the Raw
Directions:
1. Preheat oven to 425 degrees. Check to make sure the oven is at proper temperature before baking the scones.
2. Measure out GF Bisquick into a large bowl. Add yogurt and blueberries.
3. Mix with a fork. Dough will be sticky, but should turn coarse.
4. Lightly flour a cutting board with a little GF Bisquick; turn dough onto the board and lightly knead 5 – 6 times.
5. Form the dough into a circle about 10 inches around.
6. For glaze – spread butter over the top & sides and sprinkle sugar on top. (I didn’t use the butter, I just sprinkled the sugar on & patted down)
7. Cut circle into 12 wedges and place on a non-stick cookie sheet covered with parchment paper. Leave about an inch in between pieces.
8. Bake for about 15 minutes or until golden. Do not over bake.

So, the verdict? These rocked!!! WOW!!! The texture is perfect! These have virtually no fat, unless you add the butter on top, and still have less than 4g/fat per scone then. If you notice, I did not add any sugar to this recipe. The Stonyfield recipe does call for a 1/4 cup of sugar, but since the GF Bisquick contains sugar, I did not feel the need to add it. However, if you like a sweeter scone, you may want to consider adding that 1/4 cup of sugar in. Also, I halved the recipe so that I would have some GF Bisquick left to make something else with.

I am in heaven!!! I made GF Biscuits with the GF Bisquick. First wonderful biscuits I have had in over 6 years!!
I found some yesterday and will use it Friday when I make pizza. I also have a hankering for biscuits. When will it come in a larger sized box? I have to feed a pretty large family (mixed–some are GF, some are not) and it is easier on me to mix one batch of biscuits/pizza crust/pancakes/whatever than do a GF and a regular–and try to avoid Xcon.
I got a box of the GF Bisquick, and I tried the pizza crust recipe tonight. I admit the scone recipe looks like it turned out great and will be trying it soon, but I will go back to my fave Chebe for pizza crust. The Bisquick recipe called for Italian seasoning, which I'm out of, so I used Mrs.Dash Table Blend instead. The taste was great! And the crust gets nice and crispy, but it has a crumbly, mealy mouth feel. I think it works fine, but I prefer Chebe. I look forward to trying the scones and chicken and dumplings…which is comfort food I have been missing for years!

I live in NJ and have been searching to find Gluten Free Bisquick but have not been able to find it anywhere. I have requested it at my local ShopRite store but that was over a month ago and still nothing. Anyone know if you can order it online or what stores might be carrying it?

Well, tried the pizza. Turned out so well and the fact that Bisquick is so versatile, I pretty much am buying it for 9/10 my baking needs. My kids just gobbled it up as they were going through severe pizza withdrawals. I made the crust a bit too thick, though (doubled the recipe). The next week I found it in another store $2 cheaper than store #1. So, that is where I'm buying it from now on. And not making the crust so thick.
PS. Now I'm wanting biscuits and gravy, but I think pancakes are next.

Thanks for the heads up about GF Bisquick! I was a huge fan of Bisquick pancakes and biscuits as a kid, before I was diagnosed as gluten intolerant. I'd like to try the scone recipe but will have to modify it because of the dairy. I was happy to learn about this, but then, I read the ingredients and it has sugar in it, so I won't be buying it. I don't eat sugar.

Today I made pancakes with the gluten free Bisquick. I used soy milk ("original" flavor) and added a little double strength vanilla. They were fantastic and my family and guests gobbled them up! I will make them again and try other recipes as well.
Has anyone tried the classic Bisquick cranberry bread recipe using the new Gluten-free? I am wondering if I should add anything, or simply substitute it, cup for cup, as is.
I've made these twice, once with blueberries, once with raspberries, both using frozen fruit. I LOVE these things. Really, really delicious. Nice chewy texture. Great visual presentation. Greek yogurt brings a sour bite. Yummy.
I will say, the GF Bisquick boxes have a bit more flour than the recipe calls for, and the yogurt I purchased is in a 2-cup container. I just used the whole Bisquick Box (except for a little bit to flour the cutting board) and the whole 16 oz container of yogurt and 1 1/2 cups of frozen fruit — a 'fat' batch. These proportions seem fine and don't leave leftover yogurt or Bisquick around.

I have been using GF Bisquick for a few months and loving the biscuits, gravy and pizzas. I knew there had to be a way to use this to make cakes but couldn't find a recipe. Finally, I looked for a GF Bisquick Yellow cake recipe and found it tonight. My husband thought he was in heaven. He said it wasn't just good, it was great! Now I'm looking for more recipes.

Bisquick GF is pretty good, but the texture of the bisquits is odd. I added a little salt, oats and melted butter and it was terrific. Sorry, I don't know the amounts, although I measured the ingredients called for on the mix, I don't measure my ingredients. I also add oats and a little extra butter to the Betty Crocker GF Cookie Mix but I only add nuts to the wonderful Betty Crocker GF Brownie Mix (may just be the best brownies we have ever eaten!
Absolutely Wonderful as a breading (mixed with your own spices) for chicken nuggets or chicken breast tenders in a glass baking dish in the oven! Coat chicken pieces in beaten egg first and then shake in ziploc bag with your GF Bisquick breading mix. Use olive oil to coat the bottom of the baking dish and set oven at 350 F. We have no leftovers in my house when I make these! The chicken turns out tender and moist and the cooked breading is NOT stiff, gritty, and crumbly. This gluten free mix is a winner! My only complaint is the need for a larger box of this baking mix to be made available on the grocery shelf.
