Crunchmaster Coupon & Super Bowl Recipe

Anyone getting excited for the Super Bowl?  I am not a huge fan of football.  I do like to watch the commercials during the game, but the game itself is not of much interest to me.  I prefer to watch hockey.  One part of the Super Bowl festivities that I do enjoy is the food & drink.  How can you go wrong with a bunch of appetizers and gluten-free beer or wine? 

The other day I talked about some appetizer ideas over on Celiac-Disease.com.  Since then I have run across another recipe that I think will be a huge hit…Gluten-free Taco Party Dip!  How good does that sound?

Ingredients:

1 can fat-free refried beans (most, like Trader Joe’s or Old El Paso are GF)
1 lb. lean ground beef (try ground bison/buffalo for an extra boost of iron)
1 (1.25 oz.) taco seasoning mix (Ortega is GF)
2 c. shredded Mexican blend ( cheddar/Monterey Jack) cheese
1 bag (4.5 oz) Crunchmaster® Roasted Garlic Multi-Seed Crackers
1/2 c. chopped fresh tomatoes
1/4 c. thinly sliced green onions

Optional additional toppings:
1 chopped avocado
3 Tbsp. chopped cilantro
1/2 c. sour cream

Pre-heat oven to 350˚F. In a large skillet, brown the ground beef and season with taco mix. Set aside. Spray a 24 oz. Au Gratin dish, or 9” deep dish pie pan with non-stick baking spray. Evenly spread 1 can of fat-free refried beans on the bottom of the dish. Top with ground beef/taco mixture. Sprinkle with Mexican blend cheese.
Layer the Multi-Seed Crackers around the outside of the dish in an overlapping pattern. Cover crackers with aluminum foil to prevent over-browning.
Bake at 350˚F for 15 minutes, until cheese melts, and dish is warmed through.
Take from oven and remove foil from crackers. Cover with fresh chopped tomatoes and sliced green onions.

Serves 8

My notes are in italics.  In order to get my family to eat that, I would have to leave out the tomatoes and onions.  Or, better yet, add them and I don’t have to worry about sharing!  HA! 

We quickly became fans of the Crunchmaster crackers the first time we tried them.  I believe that they are the perfect pairing for a dip like this.
