Rudi’s Gluten-Free recently added tortillas to their line-up. The tortillas come in three different varieties: Plain, Spinach and Fiesta. We like to use the Fiesta variety for our Mexican themed meals on Tuesdays. Jon enjoys tacos and burritos with the tortillas, while I prefer a Mexican pizza. I hope to use them the next time I make Easy Enchilada Bake for a new twist on the dish!

Once fans “like” the brand and get access to the $2 off coupon, they can click on the giveaway tab and guess what new prize is wrapped under the scrumptious, new tortillas. I got to try the spinach ones at a GF expo just with cheese like a quesadilla – they were terrific! Very much like I remember flour tortillas being in texture, feel and taste (except spinach of course). I've been looking for them (rep said they'd be at Costco, but not here yet) and asked my local natural foods store to try to get them. I can get them online but the shipping is $$. I'd eat plain or spinach, can't stomach any spiciness. I might make a smoked gouda quesadilla, or a bacon/egg/cheese wrap. Or perhaps a hummus/carrots/veggies/grilled chicken wrap.

We make a layered Mexican baked dish with filling (made with sautéed veggies, chicken, seasonings and salsa), tortillas and cheese. I modified the original recipe from Market Day since that is where I get my easy-to-us GF diced chicken. We find it worth the cost to get a handy, standardized lower sodium than store rotisserie, tasty product in one pound bags. One trick is to break the tortillas in half and place the flat sides toward the sides of the baking dish. If you are using an oblong dish make the second layer flat along the ends, etc. This helps the food cut cleanly along the edges and keeps the middle from being too "mounded".
I would make my veggie burritos. They have beans, corn, onion, zucchini and spinach in them, as well as seasonings.

I would use the Fiesta flavor for just about anything and everything. A simple avocado and tomato wrap for lunch would be wonderful and simple, and I can see myself using them for pulled pork, Mexican lasagne, or anything that called for a tortilla. If I couldn't find the Fiesta, I would use the plain flavor. What a great idea, and I'm thrilled that Rudi's has out these out. I will definitely try and find some.
