{"id":1376,"date":"2009-07-31T20:00:50","date_gmt":"2009-08-01T00:00:50","guid":{"rendered":"http:\/\/glutenfreeislife.wordpress.com\/2009\/07\/31\/gluten-free-blueberry-chia-muffins\/"},"modified":"2009-07-31T20:00:50","modified_gmt":"2009-08-01T00:00:50","slug":"gluten-free-blueberry-chia-muffins","status":"publish","type":"post","link":"https:\/\/www.glutenfreeislife.com\/?p=1376","title":{"rendered":"Gluten-Free Blueberry Chia Muffins"},"content":{"rendered":"<p>It is no secret that I love food.&nbsp; To feed my fascination for food, I read many food blogs to get ideas for new things to bake or cook.&nbsp; I happened upon a recipe the other day for <a href=\"http:\/\/anotheronebitesthecrustblog.com\/2009\/06\/01\/blueberry-ch-ch-chia-muffins\/#comment-3649\" target=\"_blank\">Blueberry Chia Muffins<\/a> over at <a href=\"http:\/\/anotheronebitesthecrustblog.com\/\" target=\"_blank\">Another Bites the Crust&#8217;s<\/a> blog.&nbsp;&nbsp; First, love the name of the blog, how clever! \ud83d\ude09&nbsp; The muffins looked so good in the picture and I had a bunch of fresh blueberries, so off I went to make some changes to convert this recipe to gluten-free.<\/p>\n<p><a href=\"http:\/\/www.glutenfreeislife.com\/wp-content\/uploads\/2009\/07\/0191.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"border-bottom:0;border-left:0;border-top:0;border-right:0;\" border=\"0\" alt=\"019\" src=\"http:\/\/www.glutenfreeislife.com\/wp-content\/uploads\/2009\/07\/019_thumb1.jpg\" width=\"480\" height=\"314\"><\/a> <\/p>\n<p><strong><u>Gluten-free Blueberry Chia Muffins<\/u><\/strong> <\/p>\n<p>&nbsp;<\/p>\n<p>1&nbsp; 1\/2 cups <a href=\"http:\/\/www.pamelasproducts.com\/Products_frames.html\" target=\"_blank\">Pamela&#8217;s Baking &amp; Pancake Mix<\/a><\/p>\n<p>1\/4 cup ground flax seed (I used <a href=\"http:\/\/www.bobsredmill.com\/\" target=\"_blank\">Bob&#8217;s Red Mill)<\/a><br \/>1 tbsp baking powder<br \/>1\/2 tsp salt<br \/>1\/2 cup sugar<br \/>1 tbsp chia seeds mixed with 3 tbsp water (I used <a href=\"http:\/\/www.ruthshempfoods.com\/chia.html\" target=\"_blank\">Ruth&#8217;s Chia Goodness<\/a> that has hemp seeds &amp; buckwheat in it too)<br \/>1\/2 cup unsweetened applesauce<br \/>1 tsp vanilla extract<br \/>2\/3 cup nondairy milk (I used <a href=\"http:\/\/www.bluediamond.com\/shop\/natural\/almondBreeze32.cfm\" target=\"_blank\">Unsweetened Vanilla Almond Breeze)<\/a><br \/>1 cup blueberries<\/p>\n<p>Preheat the oven to 350 degrees.&nbsp; Combine chia seeds in water until it forms a gel-like substance. <\/p>\n<p>Mix all dry ingredients in a large bowl and stir to combine.&nbsp; In a separate bowl, mix the wet ingredients together.&nbsp; Add the wet ingredients to the dry.&nbsp; Fold in blueberries.&nbsp; Bake in lined muffin tins for 15 to 20 minutes.&nbsp; Check with a toothpick&nbsp; inserted into the center for doneness.  <\/p>\n<p><a href=\"http:\/\/www.glutenfreeislife.com\/wp-content\/uploads\/2009\/07\/0171.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"border-bottom:0;border-left:0;border-top:0;border-right:0;\" border=\"0\" alt=\"017\" src=\"http:\/\/www.glutenfreeislife.com\/wp-content\/uploads\/2009\/07\/017_thumb1.jpg\" width=\"485\" height=\"324\"><\/a>  <\/p>\n<p><a href=\"http:\/\/www.glutenfreeislife.com\/wp-content\/uploads\/2009\/07\/024.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"border-bottom:0;border-left:0;border-top:0;border-right:0;\" border=\"0\" alt=\"024\" src=\"http:\/\/www.glutenfreeislife.com\/wp-content\/uploads\/2009\/07\/024_thumb.jpg\" width=\"486\" height=\"333\"><\/a>  <\/p>\n<p>WOW!!!&nbsp; These are amazing!!!&nbsp; Guess who ate them &amp; loved them?&nbsp; Mr. I-don&#8217;t-like-blueberries, none other than Jon, himself.&nbsp; I couldn&#8217;t tell him about the other ingredients or he wouldn&#8217;t have touched them!&nbsp; HA!!&nbsp; Super healthy!&nbsp; Jon asked me to make them into banana nut muffins next time.&nbsp; I feel an experiment coming soon!
