{"id":1948,"date":"2009-11-19T07:00:26","date_gmt":"2009-11-19T11:00:26","guid":{"rendered":"http:\/\/glutenfreeislife.wordpress.com\/2009\/11\/19\/chocolate-covered-oreo-cake-gluten-free\/"},"modified":"2009-11-19T07:00:26","modified_gmt":"2009-11-19T11:00:26","slug":"chocolate-covered-oreo-cake-gluten-free","status":"publish","type":"post","link":"https:\/\/www.glutenfreeislife.com\/?p=1948","title":{"rendered":"Chocolate Covered Oreo Cake &#8211; Gluten-free"},"content":{"rendered":"<p>My wonderful mother-in-law, Mary, made this amazing cake for the kids last weekend.\u00a0 I just had to sneak some when the leftovers came home.\u00a0 WOW!\u00a0 This cake was awesome!\u00a0 Thanks, Mary!<\/p>\n<p><a href=\"http:\/\/www.glutenfreeislife.com\/wp-content\/uploads\/2009\/11\/0161.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"border:0;\" src=\"http:\/\/www.glutenfreeislife.com\/wp-content\/uploads\/2009\/11\/016_thumb1.jpg\" border=\"0\" alt=\"016\" width=\"454\" height=\"309\" \/><\/a><\/p>\n<p>The original recipe came from <a href=\"http:\/\/www.kraftfoods.com\/kf\/recipes\/chocolate-covered-oreo-cookie-cake-90307.aspx\" target=\"_blank\">Kraft Foods<\/a>, but Mary modified it to be gluten-free.\u00a0 Here are her instructions &amp; substitutions.<\/p>\n<p><strong><span style=\"text-decoration:underline;\">OREO Cake<\/span><\/strong><\/p>\n<p>1 pkg. devil&#8217;s food chocolate cake mix (Betty Crocker&#8217;s Gluten-free Devil&#8217;s Food Cake)<\/p>\n<p>4 squares\u00a0 BAKER&#8217;S Semi-Sweet Chocolate<\/p>\n<p>1\/4 cup (1\/2 stick) butter<\/p>\n<p>1 pkg.\u00a0 (8 oz.) PHILADELPHIA Cream Cheese, softened<\/p>\n<p>1\/2 cup sugar<\/p>\n<p>2 cups\u00a0 thawed COOL WHIP Whipped Topping<\/p>\n<p>12 OREO Cookies, coarsely crushed (Use KinniTOOS, or omit)<\/p>\n<p><strong>HEAT <\/strong>oven to 350\u00baF.<\/p>\n<p><strong>PREPARE <\/strong>cake batter and bake in 2 (8-inch) round pans as directed on package. Cool cakes in pans 10 min. Invert cakes onto wire racks; gently remove pans. Cool cakes completely.<\/p>\n<p><strong>MICROWAVE <\/strong>chocolate and butter in small microwaveable bowl on HIGH 2 min. or until butter is melted. Stir until chocolate is completely melted. Cool 5 min.<\/p>\n<p><strong>MEANWHILE, <\/strong>beat cream cheese and sugar in large bowl with mixer until blended. Gently stir in COOL WHIP and crushed cookies. Stack cake layers on plate, spreading cream cheese mixture between layers. Spread top with chocolate glaze; let stand until firm.
