Consider combining them and stuffing them inside a large baked potato for a quick meal.&#160; We frequently have leftover veggies and chicken or taco meat, so last week I decided to take those and make a new creation.<\/p>\n<p><a href=\"http:\/\/www.glutenfreeislife.com\/wp-content\/uploads\/2011\/02\/001.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"background-image: none; border-right-width: 0px; padding-left: 0px; padding-right: 0px; display: inline; border-top-width: 0px; border-bottom-width: 0px; border-left-width: 0px; padding-top: 0px\" title=\"001\" border=\"0\" alt=\"001\" src=\"http:\/\/www.glutenfreeislife.com\/wp-content\/uploads\/2011\/02\/001_thumb.jpg\" width=\"610\" height=\"427\" \/><\/a><\/p>\n<p><strong><u>Spicy Taco Stuffed Baked Potato<\/u><\/strong><\/p>\n<ol>\n<li>leftover taco meat (ground turkey + taco seasoning \u2013 <a href=\"http:\/\/www.bettycrocker.com\/products\/old-el-paso\">Old El Paso<\/a> Original is GF)<\/li>\n<li>baked potato<\/li>\n<li>roasted okra<\/li>\n<li>cheddar cheese<\/li>\n<li>avocado<\/li>\n<li>tomato<\/li>\n<li><a href=\"http:\/\/www.tabasco.com\/main.cfm\">Tabasco<\/a> Green Pepper Sauce<\/li>\n<\/ol>\n<p>1.&#160; Bake potato.&#160; I do this step in the microwave &amp; then finish off in the oven if I am not ready for the potato yet.&#160; Simply wash the potato, prick with a fork and place in the microwave.&#160; Microwave for 1-2 minutes, then flip &amp; repeat.&#160; Stick a knife or fork in to test doneness.&#160; The knife or fork will easily slide in if the potato is done.<\/p>\n<p>2.&#160; Heat remaining leftovers and then place on top of\/inside potato.&#160; Top with cheese and the microwave for 30 \u2013 60 seconds.&#160; <\/p>\n<p>3.&#160; Top with remaining cold ingredients &amp; enjoy.<\/p>\n<p>Get creative &amp; make whatever combos sound good to you.&#160; This is a great meal for these chilly nights we have had lately and all of the ingredients are naturally gluten-free!!&#160; If you don\u2019t have enough leftovers for the whole family, get a nice variety of toppings out \u2013 steam some broccoli, open a can of gluten-free chili or black beans.&#160; <\/p>\n<p>*****************************************************************************************<\/p>\n<p>I didn\u2019t quite get around to my menu plan this week.&#160; While I wasn\u2019t really watching the Super Bowl, we did have company over and I thought that being engrossed in my computer would not have been the most social way to go about the evening.&#160; <img decoding=\"async\" style=\"border-bottom-style: none; border-right-style: none; border-top-style: none; border-left-style: none\" class=\"wlEmoticon wlEmoticon-smile\" alt=\"Smile\" src=\"http:\/\/www.glutenfreeislife.com\/wp-content\/uploads\/2011\/02\/wlEmoticon-smile1.png\" \/>&#160; The rest of the week will look something like this:<\/p>\n<p>Tuesday \u2013 Spaghetti with salad<\/p>\n<p>Wednesday \u2013 Stuffed Shells, steamed broccoli &amp; salad<\/p>\n<p>Thursday \u2013 Burgers, <a href=\"http:\/\/www.glutenfreeislife.com\/?p=1514\">baked steak fries<\/a>, asparagus &amp; salad<\/p>\n<p>Friday \u2013Shrimp Scampi, pasta, sugar snap peas &amp; salad<\/p>\n<p>Saturday \u2013 Pizza and salad<\/p>\n<p>******************************************************************************************<\/p>\n<p>I need to get busy with my Valentine\u2019s Day stuff\u2026..I would love to make some heart shaped cookies this week!&#160;
