{"id":3441,"date":"2011-07-13T06:00:00","date_gmt":"2011-07-13T10:00:00","guid":{"rendered":"http:\/\/www.glutenfreeislife.com\/?p=3441"},"modified":"2011-07-13T06:00:00","modified_gmt":"2011-07-13T10:00:00","slug":"pizza-nightreinvented","status":"publish","type":"post","link":"https:\/\/www.glutenfreeislife.com\/?p=3441","title":{"rendered":"Pizza Night&ndash;Reinvented"},"content":{"rendered":"<p>It is no secret that Friday night is generally pizza night in our house.&#160; We don\u2019t typically order out, but sometimes we do.&#160; When we make pizza at home, it is usually a MYOP (make your own pizza).&#160; Either I\u2019ll use individual frozen pizza crusts from <a href=\"http:\/\/udisglutenfree.com\/\">Udi\u2019s<\/a> Gluten-free or <a href=\"http:\/\/www.rudisglutenfree.com\/\">Rudi\u2019s Gluten-free<\/a> or I will use a mix &amp; shape the dough into individual pizzas.&#160; One of my favorite mixes to use is <a href=\"http:\/\/celiac-disease.com\/bobs-red-mill-launches-a-gluten-free-resource-page\/\">Bob\u2019s Red Mill<\/a>, which is also used at one of my favorite local restaurants, <a href=\"http:\/\/www.examiner.com\/gluten-free-food-in-columbus\/marcella-s-does-gluten-free-pizza-justice-review\">Marcella\u2019s<\/a>.&#160; <\/p>\n<p>We do pizza on Fridays because the kids are often heading in different directions and eating at different times.&#160; Also, I usually have a long run planned for Saturday with <a href=\"http:\/\/www.premierraces.com\/mit\/index.htm\">MIT<\/a>, so carb loading is the way to go!&#160; <\/p>\n<p>This past Friday I had some random ingredients that I needed to put to use, so those became the toppings for my pizza.&#160; While they may not all sound like they go well together, my pizza ROCKED!&#160; <\/p>\n<p><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/byfiles.storage.live.com\/y1pfMT0-3IpQITzrfJgdg4AqzDz2wHDE62hfT9DPvSwAitRV4TEfb11mQRIfsRa6wWzst6Jr08gqoQ\/006.jpg?psid=1\" width=\"473\" height=\"294\" \/><\/p>\n<p>Don\u2019t mind the bite taken out of the piece on the left, I was so excited &amp; hungry, that I forgot to take pictures first!&#160; <\/p>\n<p><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/byfiles.storage.live.com\/y1p0lkfjwetKiHMmp3HrMWQbmkIO8_-o6m9gIBr6Zl6ucfg7NhMnPUndRnIB-YKsr0FwWol_jQGZq4\/010.jpg?psid=1\" width=\"481\" height=\"323\" \/><\/p>\n<p>Here are the ingredients:<\/p>\n<ul>\n<li>1 frozen Udi\u2019s pizza crust <\/li>\n<li>1\/2 cup diced <a href=\"http:\/\/en.wikipedia.org\/wiki\/San_Marzano_tomato\">San Marzano<\/a> tomatoes, drained (these make the pizza!) <\/li>\n<li>1\/4 cup ricotta cheese <\/li>\n<li>1\/4 cup mozzarella cheese <\/li>\n<li>Sauteed mushrooms <\/li>\n<li>Spinach <\/li>\n<li>Fresh Basil (for garnish) <\/li>\n<\/ul>\n<p>1.&#160; Heat oven to temperature indicated on package \u2013 400 degrees is what I use.&#160;&#160; Spread ricotta cheese on frozen pizza crust.&#160; <\/p>\n<p>2.&#160; Spread tomatoes &amp; sauteed mushrooms across crust; top with mozzarella and spinach.&#160; <\/p>\n<p>3.
