{"id":4728,"date":"2012-03-27T06:00:00","date_gmt":"2012-03-27T10:00:00","guid":{"rendered":"http:\/\/www.glutenfreeislife.com\/?p=4728"},"modified":"2012-03-27T17:49:11","modified_gmt":"2012-03-27T21:49:11","slug":"naturally-gluten-free-kumquats","status":"publish","type":"post","link":"https:\/\/www.glutenfreeislife.com\/?p=4728","title":{"rendered":"Naturally Gluten-Free: Kumquats"},"content":{"rendered":"<div class=\"wlWriterHeaderFooter\" style=\"float: none; margin: 0px; padding: 4px 0px 4px 0px;\">Have you ever had a kumquat?\u00a0 I hadn\u2019t until the other day.\u00a0 I was shopping at <a href=\"http:\/\/www.traderjoes.com\/\">Trader Joe\u2019s<\/a> with my mother and as we headed to the back of the store to check out the samples, I saw some little, orange fruit cut in half.\u00a0 They looked like miniature oranges.\u00a0 Surprisingly I grabbed one without finding out what it was, confident that it was gluten-free because it looked like citrus to me.\u00a0 It was sweet, then tart.\u00a0 I looked around &amp; found out that it was a kumquat!\u00a0 Oooh!!\u00a0 I really liked these!\u00a0 Of course I picked up a container to bring home with me so I could add them to my morning bowl of fruit.<\/div>\n<p>I was surprised that the skin of the kumquat is eaten right along with the rest of the fruit.\u00a0 It looks a lot like the skin of an orange, but it is much thinner and it isn\u2019t tough to chew at all.\u00a0 The skin is actually the sweeter part of the fruit, while the flesh\/inside is the more tart part of the fruit.<\/p>\n<p><a href=\"http:\/\/www.glutenfreeislife.com\/wp-content\/uploads\/2012\/03\/IMG_0957.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"background-image: none; padding-left: 0px; padding-right: 0px; display: inline; padding-top: 0px; border: 0px;\" title=\"IMG_0957\" src=\"http:\/\/www.glutenfreeislife.com\/wp-content\/uploads\/2012\/03\/IMG_0957_thumb.jpg\" alt=\"IMG_0957\" width=\"388\" height=\"444\" border=\"0\" \/><\/a><\/p>\n<p>More about kumquats:<\/p>\n<blockquote><p><strong>Fortunella margarita<\/strong>, also known as the oval kumquat or the <strong>Nagami kumquat<\/strong>, is a close relative to Citrus species. It is a small evergreen tree, that can reach more than 12 ft (4 m) high and 9 ft (3 m) large. It is native to southeastern Asia, and more precisely to China. The oval kumquat has very fragrant citrus-like white flowers, and small edible oval orange fruits. The oval kumquat is an ornamental little tree, with showy foliage, flowers and fruits. It is also fairly frost-hardy, and will withstand negative temperatures such as 14 \u00b0F (-10 \u00b0C), and even a little lower for very brief periods. It can be grown in USDA <a href=\"http:\/\/en.wikipedia.org\/wiki\/Hardiness_zone\">hardiness zones<\/a> 9 and warmer, but can also be tried in sheltered places, in USDA hardiness zone 8. Unlike most citrus species, the oval kumquat has a shorter growth period, and goes into dormancy fairly earlier in autumn. This partly explains its better frost hardiness.<\/p>\n<p>Kumquats are often eaten raw. As the rind is sweet and the juicy centre is sour, the raw fruit is usually consumed either whole\u2014to savour the contrast\u2014or only the rind is eaten. The fruit is considered ripe when it reaches a yellowish-orange stage and has just shed the last tint of green.<\/p>\n<p>Culinary uses include candying and kumquat preserves, <a href=\"http:\/\/en.wikipedia.org\/wiki\/Marmalade\">marmalade<\/a>, and <a href=\"http:\/\/en.wikipedia.org\/wiki\/Jelly_(fruit_preserves)\">jelly<\/a>. Kumquats can also be sliced and added to salads. In recent years kumquats have gained popularity as a <a href=\"http:\/\/en.wikipedia.org\/wiki\/Garnish\">garnish<\/a> for <a href=\"http:\/\/en.wikipedia.org\/wiki\/Cocktail\">cocktail<\/a> beverages, including the <a href=\"http:\/\/en.wikipedia.org\/wiki\/Martini\">martini<\/a> as a replacement for the more familiar olive. A kumquat <a href=\"http:\/\/en.wikipedia.org\/wiki\/Liqueur\">liqueur<\/a> mixes the fruit with <a href=\"http:\/\/en.wikipedia.org\/wiki\/Vodka\">vodka<\/a> or other clear spirit. Kumquats are also being used by chefs to create a niche for their desserts and are common in European countries.<\/p>\n<p>Potted kumquat trees at a kumquat liqueur distillery in <a href=\"http:\/\/en.wikipedia.org\/wiki\/Corfu\">Corfu<\/a>.<\/p>\n<p>The <a href=\"http:\/\/en.wikipedia.org\/wiki\/Cantonese_people\">Cantonese<\/a> often preserve kumquats in <a href=\"http:\/\/en.wikipedia.org\/wiki\/Salt\">salt<\/a> or sugar. A batch of the fruit is buried in dry salt inside a <a href=\"http:\/\/en.wikipedia.org\/wiki\/Glass\">glass<\/a> jar. Over time, all the juice from the fruit is <a href=\"http:\/\/en.wikipedia.org\/wiki\/Diffusion\">diffused<\/a> into the salt. The fruit in the jar becomes shrunken, wrinkled, and dark brown in colour, and the salt combines with the juice to become a dark brown <a href=\"http:\/\/en.wikipedia.org\/wiki\/Brine\">brine<\/a>.<\/p>\n<p>In the <a href=\"http:\/\/en.wikipedia.org\/wiki\/Philippines\">Philippines<\/a> and <a href=\"http:\/\/en.wikipedia.org\/wiki\/Taiwan\">Taiwan<\/a>, kumquats are a popular addition to <a href=\"http:\/\/en.wikipedia.org\/wiki\/Green_tea\">green tea<\/a> and <a href=\"http:\/\/en.wikipedia.org\/wiki\/Black_tea\">black tea<\/a>, either hot or iced.<\/p>\n<p>In <a href=\"http:\/\/en.wikipedia.org\/wiki\/Vietnam\">Vietnam<\/a>, kumquat <a href=\"http:\/\/en.wikipedia.org\/wiki\/Bonsai\">bonsai<\/a> trees (round kumquat plant) are used as a decoration for the <a href=\"http:\/\/en.wikipedia.org\/wiki\/T%E1%BA%BFt\">T\u1ebft<\/a> (Lunar New Year) holiday.
