border: 0px;\" title=\"Rice-Parfait-copy-225x300\" src=\"http:\/\/www.glutenfreeislife.com\/wp-content\/uploads\/2012\/05\/RiceParfaitcopy225x300_thumb.jpg\" alt=\"Rice-Parfait-copy-225x300\" width=\"184\" height=\"244\" border=\"0\" \/><\/a><\/p>\n<p><span style=\"text-decoration: underline;\"><span style=\"font-size: small;\"><strong>Coconut Raisin Rice Parfait<\/strong><\/span><\/span><\/p>\n<ul>\n<li>1 box of <a href=\"http:\/\/www.nuevacocina.com\/store\/2382\/Coconut-Raisin-Rice.aspx\">Nueva Cocina Coconut Raisin Rice<\/a><\/li>\n<li>1 Cup of unsweetened coconut milk<\/li>\n<li>1 Cup of cream of coconut<\/li>\n<li>1 tablespoon of butter<\/li>\n<li>1 tub of gluten-free pudding (you can also cook the instant kind)<\/li>\n<li>Whipped cream (you can use Cool Whip or make your own with heavy whipping cream)<\/li>\n<\/ul>\n<p>Follow the directions on the Nueva Cocina box to cook the Coconut Raisin Rice.\u00a0 Once cooked, add 1 cup of cream of coconut, 1 cup of the unsweetened coconut milk and 1 tablespoon of butter.\u00a0 Cook on low heat until liquid is absorbed and rice has a thick and creamy consistency, approximately 20 minutes.\u00a0 Remove from heat and refrigerate covered for at least an hour.\u00a0 When ready to serve, spoon a layer of pudding into a wine glass, then add a layer of the rice mixture.\u00a0 Continue to build your layers and top it off with whipped cream.\u00a0 Garnish with toasted coconut and\/or fruit of your choice.<\/p>\n<p>Now for the fun stuff!!\u00a0 Make sure to follow the directions below to enter to win one of each of the following.\u00a0<em> *Please note the picture shows 2 of each product, the giveaway winner will receive 1 of each product.<\/em><\/p>\n<p><a href=\"http:\/\/www.glutenfreeislife.com\/wp-content\/uploads\/2012\/05\/GlutenFree1.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"display: inline;
