The recipe was for Ree Drummond\u2019s <a href=\"http:\/\/thepioneerwoman.com\/cooking\/strawberry-oatmeal-bars\/\">Strawberry Oatmeal Bars<\/a>. If you don\u2019t know who Ree Drummond is, check out her blog called\u00a0<a href=\"http:\/\/thepioneerwoman.com\">The Pioneer Woman<\/a>.\u00a0Her recipes are showcased with step-by-step photos that will leave drool on your keyboard &#8211; seriously! Obviously I couldn\u2019t make the recipe as written because it wasn\u2019t gluten or dairy-free, but I could modify it so that we could enjoy our own little piece of heaven.\u00a0<\/p>\n<p>Surprisingly I had everything I needed on hand. Here are some of the substitutions I made and the recipe with the changes I made will follow.\u00a0<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" title=\"IMG_0763.JPG\" src=\"http:\/\/www.glutenfreeislife.com\/wp-content\/uploads\/2016\/08\/IMG_0763.jpg\" alt=\"IMG 0763\" width=\"600\" height=\"450\" border=\"0\" \/><\/p>\n<p><a href=\"http:\/\/bakeryonmain.com\">Bakery on Main<\/a> Happy Quick Oats &amp; <a href=\"https:\/\/enjoylifefoods.com\">Enjoy Life<\/a> All-Purpose Flour<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" title=\"IMG_0765.JPG\" src=\"http:\/\/www.glutenfreeislife.com\/wp-content\/uploads\/2016\/08\/IMG_0765.jpg\" alt=\"IMG 0765\" width=\"450\" height=\"600\" border=\"0\" \/><\/p>\n<p><a href=\"https:\/\/earthbalancenatural.com\">Earth Balance<\/a> Soy-Free Buttery Sticks<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" title=\"IMG_0766.JPG\" src=\"http:\/\/www.glutenfreeislife.com\/wp-content\/uploads\/2016\/08\/IMG_0766.jpg\" alt=\"IMG 0766\" width=\"450\" height=\"600\" border=\"0\" \/><\/p>\n<p><a href=\"http:\/\/www.croftersorganic.com\">Crofter\u2019s<\/a> Berry Harvest Organic Premium Fruit Spread<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" title=\"IMG_0774.JPG\" src=\"http:\/\/www.glutenfreeislife.com\/wp-content\/uploads\/2016\/08\/IMG_0774.jpg\" alt=\"IMG 0774\" width=\"600\" height=\"450\" border=\"0\" \/><\/p>\n<p>The finished bars. Holy guacamole were these good! Not only were they amazing when they were still warm, but once chilled in the refrigerator, which is where I stored them. Jon ate these for breakfast every day until they were gone. He loved them and asked that I make them again really soon!<\/p>\n<p><strong><span style=\"text-decoration: underline;\">Gluten-Free, Dairy-Free Berry Oatmeal Bars<\/span><\/strong><\/p>\n<p><em>*Modified from the original recipe courtesy of The Pioneer Woman &#8211; Strawberry Oatmeal Bars<\/em><\/p>\n<ul>\n<li>1 3\/4 sticks cold Earth Balance Soy Free Buttery Sticks<\/li>\n<li>1 1\/2 cups Enjoy Life All-Purpose Flour<\/li>\n<li>1 1\/2 Bakery on Main Happy Quick Oats<\/li>\n<li>1 cup packed brown sugar<\/li>\n<li>1 teaspoon baking powder<\/li>\n<li>1\/4 teaspoon salt<\/li>\n<li>10-12 ounces Crofter\u2019s Berry Harvest Organic Premium Fruit Spread<\/li>\n<\/ul>\n<p>1. Preheat oven to 350 degrees. Spray a 9 x 13 or 8 x 10 baking dish with cooking spray.\u00a0<\/p>\n<p>2. Mix together dry ingredients.<\/p>\n<p>3. Cut in the Earth Balance with a pastry cutter until the mixture resembles coarse sand.<\/p>\n<p>4. Sprinkle half of the mixture into the pan and press down lightly to pack it down.<\/p>\n<p>5. Spoon the Crofter\u2019s spread over the mixture and use a spoon or butter knife to spread evenly.<\/p>\n<p>6. Sprinkle the other half of the mixture evenly over the top and press down lightly.\u00a0<\/p>\n<p>7. Bake until the top is light golden brown. This took me about 40-45 minutes, but I started checking it at 35 minutes. Remove from the oven and let cool in the pan.
