{"id":971,"date":"2009-05-14T09:21:29","date_gmt":"2009-05-14T13:21:29","guid":{"rendered":"http:\/\/glutenfreeislife.wordpress.com\/2009\/05\/14\/chocolate-chip-pie-gluten-free\/"},"modified":"2009-05-14T09:21:29","modified_gmt":"2009-05-14T13:21:29","slug":"chocolate-chip-pie-gluten-free","status":"publish","type":"post","link":"https:\/\/www.glutenfreeislife.com\/?p=971","title":{"rendered":"Chocolate Chip Pie ~ Gluten-Free"},"content":{"rendered":"<p>I needed to make a quick dessert last Saturday, so I turned to an old favorite.&nbsp; This is a dessert that I first made when I was 13 or 14 years old (Jon&#8217;s age!).&nbsp; I pulled out a frozen pie crust from <a href=\"http:\/\/www.wholefoodsmarket.com\/products\/gluten-free.php\" target=\"_blank\">Whole Foods Bakehouse<\/a>.&nbsp; <\/p>\n<p><a href=\"http:\/\/www.glutenfreeislife.com\/wp-content\/uploads\/2009\/05\/ccp.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"border-right:0;border-top:0;border-left:0;border-bottom:0;\" height=\"395\" alt=\"ccp\" src=\"http:\/\/www.glutenfreeislife.com\/wp-content\/uploads\/2009\/05\/ccp_thumb.jpg\" width=\"536\" border=\"0\"><\/a> <\/p>\n<p><strong><u>Nestle&#8217; Toll House Chocolate Chip Pie<\/u><\/strong><\/p>\n<p>1 unbaked pie shell (I used Wh0le Foods Bakehouse GF Pie Crust)<\/p>\n<p>2 large eggs<\/p>\n<p>1\/2 cup GF Flour (I used Pamela&#8217;s Baking &amp; Pancake Mix)<\/p>\n<p>1\/2 cup sugar<\/p>\n<p>1\/2 cup packed brown sugar<\/p>\n<p>3\/4 cup (1.5 sticks) butter, softened<\/p>\n<p>1 cup Semi-sweet chocolate chips<\/p>\n<p>1 cup chopped nuts (I omitted this b\/c I didn&#8217;t have enough)<\/p>\n<p>Sweetened whipped cream or ice cream for topping (I used Cool Whip in a can)<\/p>\n<p>Preheat oven to 325.<\/p>\n<p>Beat eggs in large mixing bowl on high speed until foamy.&nbsp; Beat in flour, sugar &amp; brown sugar.&nbsp; Beat in butter.&nbsp; Stir in chocolate chips &amp; nuts.&nbsp; Spoon into pie shell.<\/p>\n<p>Bake for 55 to 6o minutes or until knife inserted halfway between the center &amp; the edge comes out clean.&nbsp; Cool on wire rack.&nbsp; Serve warm w\/ whipped cream or ice cream.<\/p>\n<p>**I baked for about 50 minutes.&nbsp; Keep a close eye on this.&nbsp; Mine almost looked overdone on the top, but was perfect.&nbsp; <\/p>\n<p>**If you don&#8217;t want all the chips to sink to the bottom, either use mini chocolate chips or dust with GF flour or cocoa.&nbsp; <\/p>\n<p>This was a huge hit.&nbsp; I forgot just how simple &amp; delicious this dessert is.&nbsp; The only bad thing&#8230;.Jon dropped the last 2 pieces on the floor!!
