Welcome to the last full week of October! If you haven’t already done so, please make sure to enter to win the EVOL Foods giveaway – it ends in 2 days!! Yesterday I ran in the Nationwide Columbus Half Marathon and had a blast. I will have a race recap up soon, but must tell you that I have found the best way to gain crowd support during a race – wear a tutu:
This week’s menu plan will hopefully be followed a little better than the past few weeks. It has really be a struggle lately, so I am pledging here, in cyberspace, to stick to my plan this week. Any one else struggle with this? I know half of the battle is planning, but I need to follow through.
Monday – Leftover mac & cheese with tuna and salad
Tuesday – Mexican pizzas with black beans and corn, salad
Wednesday – Bourbon chicken, coconut baked brown rice, broccoli and salad
Thursday – Bison or turkey burgers, steak fries and salad
Friday – Make your own pizza and salad
Saturday – Take out
What did you do this past weekend? Do you meal plan? If so, how do you stick to it?

My son and me, November 2000. This is before we were gluten-free/diagnosed Celiac.

Thanks for your awesome inspiration! I love reading your weekly menu plans. This past weekend I attended the funeral of my best friend, who passed away very very unexpectedly – and also cleaned up the veggie garden to put it to bed for the winter.
I try to meal plan dinners for 2-3 weeks at a time, buying all but the fresh produce in one big trip so I have it all on hand. Like you, some weeks are easier to stick to the plan than others, but I make sure I at least make a meal from the menu, even if I take from different weeks or whatever. That way I know I have what I need, and don't have to make many last minute runs to the grocery store. Luckily, eating out is not an option because aside from 3 of us with celiac (my 5.5 yr old daughter, 7 yr old son, and likely myself) or gluten intolerance (my 9.75 yr old son and fiance), we have dairy allergy or intolerance, and my daughter has a total of 20 food allergies… lol
Congrats on your half marathon! My fiance and I were gonna do one in SC in Dec, but due to injuries and illness, need to push it back to Dec 2013.

Jen,
I am sorry to hear about your loss ((HUGS)).
Sounds like you are quite busy with meal planning!
Kim
Looking forward to your race recap especially since I ran Columbus too! I looked for you but didn't see you…not sure how I missed the tutu though
Hope you aren't as sore as I was on Monday!
Sara,
So glad that you are back at it!! I would have loved to meet up before hand! Are you doing any of the races this fall – Buckeye Classic or Thanksgiving Day race?
Kim
Unfortunately I can't do the Buckeye Classic b/c I am getting major oral surgery two days before, and then I will be back in PA for Thanksgiving
Maybe we can try for a Saturday run or meet up just to chat or something b/c I'd love to finally meet you!
We will definitely have to work something out!
Kim
